Bear has a weakness for a Bakewell tart. He’d never admit it, but the evidence keeps disappearing from the cooling racks.

So we made him one he can’t argue with. A soft, gooey blondie base, still fudgy in the middle. Cherry compote goes in next, muddled through rather than neatly swirled, so every square gets its own streaks of sticky, tart fruit. Then a generous scattering of flaked almonds, baked until the edges turn crisp and golden.

Sweet, sharp, nutty, soft. It tastes exactly like the slice you’d point at through the glass. It just skips the pastry and gets straight to the good part.

Best eaten slightly warm. Ten seconds in the microwave. We won’t tell anyone.
